Happy Valentine's Day

I'll keep this short and sweet, as we all know that Valentine's Day is on 14th February. This day always makes me think of chocolate...
There is a thing about chocolate and love, or do I just love chocolate? Anyway, I adore these little Valrhona chocolate love cakes. But I would say that, because they came from my oven, made with my love, in my kitchen. The recipe makes more than two individual cakes, but hey, this way you can show your sweetheart that you love them the next day too!

50g butter
100g dark chocolate, coarsely chopped
1 tsp vanilla extract
1/3 cup sugar
1 egg, lightly beaten
1/2 cup ground almonds
1 Tbsp quality cocoa powder, sifted
1 Preheat oven to 180°C. Grease and dust with flour 4 x 150ml-capacity heart-shaped or round cake tins and line bases with non-stick baking paper, cut to fit. Melt chocolate and butter together in a double boiler or microwave. Stir until smooth.
2 Whisk egg, sugar and vanilla together until thick and pale. Fold the melted chocolate and butter into this mixture then fold in the ground almonds and sifted cocoa to just combine.
3 Divide the mixture between the prepared cake tins. Bake for 20-25 minutes or until a skewer inserted comes out moist but clean. Cool for 15 minutes to set before removing from cake tins to cool completely.
4 Once cold, sandwich cakes together with mascarpone, scatter with fresh berries, dust with icing sugar and devour!

And if you don't have a Valentine this year then this cake is perfect for you to enjoy by yourself.
Happy days!
